Nutrition & Health During Pregnancy

​Pregnancy sure changes a lot of things about your body, and its been quite a journey going

through all of the stages & changes. Initially before I was pregnant, I thought my diet

would be cleaner than ever and my exercise routine would not change dramatically.

Unfortunately for me, I had a rude awakening. Morning sickness or should I say all-day-

sickness consumed my body for the first 3.5-4 months and this made it difficult to do

anything. My diet went downhill from there as well.

Current Diet:

Since I had a hard time keeping my prenatal vitamin down for a few months, I attempted to

eat more fruits and vegetables, and on some days I did. But on most days comfort carbs

like mac & cheese, moms baked goods and mashed potatoes seem heavenly. So….pretty

much I just indulged everyday. 

Currently being 5 months pregnant I feel that I am in a different phase of pregnancy. I

finally feel like myself, and it feels so GOOD!!!

​I began to eat foods I normally eat like avocados, veggies, hummus etc and they are

satisfying again. The biggest change in my diet is the number of times I eat in a day

(because it seems like I eat 10 meals). But pregnancy is not a time to restrict, so I am 

​enjoying these little indulgences. The biggest food change Ive had was that I started eating

meat again and put my prior vegetarian lifestyle on hold. There’s no particular reason for

this, other than the fact that I told my hubs once I get pregnant I will eat lean meat for the

baby (and I am holding that promise).

Currently: 5 Months Pregnant (More than 1/2 way there!!!)

Baby is the size of a Banana and is about 10/11 inches tall! 

Total Weight Gain: 10 lbs.

Let’s Talk Food

What a Typical Day Looks Like:

5/6am: Wake – Earl Grey Tea/Small Coffee (while I get ready for work)

6/7am: Breakfast – Quiche with potatoes & side salad, or bagel with cream cheese & fruit or egg and bagel sandwich, or eggs Benedict with home potatoes, 5- egg white veggie omelet with potatoes of course

​9:30/10am: Snack – Greek Yogurt with almonds or Tea with mozzarella stick & crackers, Crackers with Avocado & Tea

12pm: Lunch – Large salad loaded with raw veggies & a slice of a french baguette, or pizza with a side salad, light dressing or whatever seems appetizing when Im out & about and always something sweet to end the meal like chocolate or candy

3pm: Snack – Fresh Fruit or smoothie, or a mini sandwich of some sort

5/6pm: Dinner – Gosh this one has been a random one, but usually a starch like potatoes or rice, some sort of protein like chicken breast and lots of cooked or raw veggies with dessert always!

8/9pm: Snack – This one gets me every night, Usually ice cream or chips & salsa or dessert with tea, candy like Twizzlers or Jelly Beans or chips (YEP!!!… chips!!!) 

Biggest Indulgances/Food Cravings so far:

Veggie Hummus Wraps with a side of Lays Chips

Crunchy salads with kale, croutons, fresh raw mushrooms, red onion & caesar dressing

French Fries from McDonalds (This one only happened once)

Farm Fresh Strawberries!! (This one is a tough one, June some sooner!)

Ripe Peaches

Eggs with potatoes any way, any style with lots of sriracha sauce

Crunch wrap supreme from Taco Bell

​Raw Lemons in my water, or just peeled and eaten as a snack
(this one is bizarre to me, the sour taste is so comforting)

Filet Mignon (and this is coming from a vegetarian)

Work Out Routine:

*Disclaimer: If you worked out prior to pregnancy, it is scientifically proven that exercise during pregnancy strengthens the babe’s heart beat, gives you more strength & energy during pregnancy & labor and is 100% safe when done appropriately (Read about it here).

This one has changed dramatically! But Im still trying to do a little at home.

I’ve only began working out these past 2-3 weeks because I finally have enough

energy to do so. I try to exercise 2-4 times a week (15-30 minutes).

The following are exercises I currently do:

Lunges

Squats

Light weight exercises to tone arms

Light prenatal yoga/stretching 

Short walk, very short walk …..mainly to the fridge & back :p


Goals:

Begin more walking since the weather is getting warmer, increase exercising to 3-5 times a

week to build up intensity.

Plan for Post-Baby Body:
———————————–

This is not something I am going to beat myself up about. The woman’s body goes through

an incredible change and produces such a miracle. My plan is to take everything slow,

allow my body to heal, breastfeed exclusively and continue to eat healthy.

I think everything will fall into place with time.

Veggie Spring Rolls

Make something healthy today!

I love light, healthy and tasty appetizers like this because it’s

​perfect for any day, time & occasion!

​ 

Time: 25-30 minutes

Yield: 20-24 (1/2 sliced rolls), 10-12 full rolls

Ingredients:

1 package Rice Paper

1 avocado, thinly sliced the long way

1c shredded or thinly sliced carrot

1 small/medium sized cucumber, thinly sliced into strips

1c shredded red cabbage

1/2c long sliced red pepper

5-10 baby romain/or endive leaves

Sesame seeds for garnish (optional)

1/2 package firm tofu, sliced into strips or cooked, seasoned chicken strips (optional)

1/2c peanut sauce (for dipping)

1/2c sweet chili sauce (for dipping)

Directions:

1. Prep all vegetable ingredients (wash, chop, slice etc). Set on to plates around

your work space.

2. Boil a tea kettle of hot water. Place 1c hot water into large bowl. Add 1c room

temp water into the same bowl. The water should be hot, but manageable. Take

one rice sheet, and place it into the water for 30-45 seconds. Watch as the rice

paper softens and becomes completely see-through. 

3. Remove the rice paper from the water and layout on your workspace. Layer

vegetables one at a time. I begin with avocado, and alternate to mix up the

colors. Then, fold the flap closest to you first over the vegetables in the center.

Then the same with the left the right sides and roll it over until the last flap facing

away from you sticks to the roll and closes it completely. 

4. Repeat until all vegetables are used up. 

5. Slice rolls in half, and place on a platter. Serve with dipping sauced and

​garnish with fresh herbs or sesame seeds if desired.

Roses are Red,Violets are Blue, The secret is out… a baby is due… 

Happy Valentine’s Day!

We are so, so, so excited to finally announce that we are expecting this summer!

​I can’t even describe the joy, excitement, and happiness we feel sharing this news with our

friends and family. It’s been a busy and bumpy few months, but now that I’m in my second

trimester things are getting a little easier. 

Our Pregnancy Story:

Michael and I were praying to expand our family about 6-8 months after I completed

college. We always talked about having babies, but honestly the idea was exciting and

frightening at the same time. Our life felt so complete already with love, adventure, and

career. But Children bring more joy, more love and more happiness.

I wanted to get pregnant when I was about half way into my

rotations and we are so grateful that God had a similar plan for us. After we decided to 

start trying, we got pregnant right away. Once I find out I was expecting (I was very 

shocked for a few days!!) , I decided to keep it a secret from my hubs and wait until

christmas morning to tell him. It was always a dream of mine to tell him

the news on a special day and Christmas was just too good to pass up.

It was the longest few weeks of my life trying to keep a

secret like that. But the torture and patience was so worth it. I bought a little pair of

sneakers and wrapped them up. On Christmas morning I let him open his gift as I recorded

​ his reaction. He was speechless, shocked and beyond happy (tears were definitely involved

here). Telling him made everything
 seem more real, and the shock really hit us, (we’re 

going to be parents!!). 

My First Trimester:

Once I found out I was pregnant, I felt so great. I had not one symptom and I was happy

about that. At 6 weeks on the dot, the morning sickness came in full force. At first it was just

nausea and vomiting in the morning, then it progressed to all day sickness. I couldn’t keep

anything down and I began to loose a little weight. I was basically on a bread, mashed

potatoes and mineral water diet for a few weeks only because that seemed to be the only

food that stayed down.  I began to worry and so did my Doc, so

she prescribed me something to take in the mornings to help me get out of bed. Luckily

the preceptor at my rotation was super understanding and allowed my hours to be very

flexible. Once I started getting into a routine, I was able to control the morning sickness a

little better. I learned that I had to pretty much snack all day to keep the nausea away. 

Around my 12-13th week things began to settle, and I began to feel better. Now in my

 second trimester Im still experiencing a little morning sickness but I tend to feel great in

the afternoon. Im looking forward to more better days, and for that bump to really pop!

Creme Brûlée Cheesecake

I hope you had a wonderful thanksgiving with your family!

This year we party hopped over to both set’s of families to spend some quality time with

everyone. I sent out a snapchat (username: vlagoyda) of this scrumptious cheesecake I 

made for my sister-in-law’s party and not only was it was such a big hit, it was also so easy

to make. I hope you enjoy this recipe as much as we did. 

P.s. this recipe was created one night not too long ago when we were hosting, and

​ I wanted to make my cheesecake a little more special..

You will need:

1 9-inch tart pan with a removable bottom

1 small creme brûlée torch

Ingredients:
Crust:

– 1c graham cracker crumbs
– 1/3c hazelnut flour

– 1/3c sugar
– 1/2c coconut oil or butter

Batter:

2 room temperature 8oz cream cheeses
– 1/2c sugar
– 1/2tsp Vanilla
– 3 large eggs

Misc.:

​- 1 package of instant creme brûlée mix (I used this one), can be found at your local grocery store or online

​Directions:
1. Preheat oven to 350.

2. Combine all ingredients for the crust in a bowl, press with your hands to make

a moist crumbly mixture. Then press evenly into the 9-inch pan, making sure to

spread the crumbs over to the sides, and pressing firmly to solidify the mixture.

Then bake at 350F for 10-15 minutes.

Then remove from oven and cool, while reducing heat to 300F and place 1-2

remains of water into the lower shelf of the oven to create a sauna effect
(This prevents any cracking).

3. Using an electric/stand mixer, combine cream cheese with sugar and beat

until fluffy and well combined. 

4. Add vanilla, and continue to beat for another few minutes.

5. Add the eggs one at a time, making sure the batter is evenly mixed before

adding each egg. Continue to mix on high for another 1-2 minutes.

6. Pour batter over crust, and bake at 300F for one hour. Once its done, remove

and cool.

7. Meanwhile, prepare creme brûlée mixture per directions on the box (aka. add

cream and milk and simmer). Pour creme brûlée mixture over cheesecake and

refrigerate until firm (30-40 min?..) Before serving, sprinkle the sugar that comes

with the creme brûlée mixture over the top, and using a small torch, caramelize

the sugar, garnish with fresh fruit and powdered sugar.

Today my hubs & I are attending a friend’s birthday party after morning

service. But I really wanted to share one of my little secrets with you.

The secret to a great look is not the name of the brand or the price tag attached,

its’ actually your eye. Great and unique style comes from within. This skirt for

instance, is from h&m (one of my favorite places to shop), and the top is from

forever 21. I usually only invest in a good accessory (shoes/bags/scarves) to

complete my looks. I like to look around everywhere for my looks, because you

never know what little gem you will find at a local affordable store.

autumn; 3 ways for quick & effortless style..

​I love autumn fashion, particularly because you can layer as much as you want

and still get away with sandals to top off the look.

I mean, when else are you really able to wear over the knee boots with a mini

dress without freezing your butt off?!.. 

I want to make this post as quick & easy as this look.

Effortless style is created when you effortfully throw things on (usually in a rush)

and before you run out the door and look in the mirror you think,

“hmm this really works well together”.. 

My take on autumn is quite simple and doesn’t require you to always purchase

new items for the season.

Here are my top 3 favorite fall combinations:

1. Over the knee boots + casual mini dress/skirt with a cozy cardigan + chunky scarf

2. Boyfriend/or skinny jeans + loose blouse/your husbands t-shirt tucked in the front + a fun jacket + cute high heeled shoe (bootie or pump)

Happy Sunday!

Oh how I look forward to the weekends!

Weekends are great for catching up on chores… not! More like lounging 

around in your comfy pi’s, sipping on piping hot – hot cocoa and watching Christmas

 movies.. Okay, maybe that’s just us on this sunday night (the proof is on snapchat

@vlagoyda) , but needless to say I love the weekends. I love dressing up or dressing down,

or sometimes a little mixture of both. I paired this special fuchsia pink bag with this old

grey comfy cardigan and my trusty SW over-the-knee-boots.

Grey has been my favorite color to wear this season, other than an all white

or all black look, can’t go wrong with those…  either.

I wanted to share a little story about this bag, and

why I love purses in general, so here goes:

A very long time ago, when I was maybe 4-5 years old, my childhood best friend, Arina and

I did everything together, and luckily for us our mothers were great friends too. We spent

almost everyday together; playing with homemade paper dolls or making mud soup. One

day our mothers decided to surprise us with these little plastic duffle like purses. Hers was

purple, and mine was red. Red was my mom’s favorite color, so naturally it was my favorite

color too. We felt like princesses with our purses, walking on cloud nine. I distinctively

remember we would sit in the front of the church with our purses on our lap like classy little

60-year-old ladies.. We just couldn’t believe that we had these beautiful little bags. So a

little while passed, and my family received acceptance to come to America. My mom told

me to pack my stuff for “America” so I did just that. I took my purse and stuffed it with a

notebook and pen for the plane, my little album (because every little kid in Ukraine had

their own album, even though it was empty), and a little doll called a poopsik (aka little

Russian baby doll). We had to leave for Kiev in the middle of the night, and it wasn’t until it

was too late when I realized I left my little purse behind. I cried the entire way for it.

Although I didn’t realize it until now, I think I left an important part my childhood behind.

Everything that I felt like was mine, I forgot. And ever since that point I loved purses. I 

preferred them to dolls, toys, or anything else. 

​This purse in particular is special to me because it was my hubs choice as my college

graduation gift. Something I will always think of when I wear it.

Coconut Chia Pudding

I fell in love with chia pudding ever since I tried it at La Pain Quotidien in

New York City a few years back.  Since that point, I tried to

recreate that recipe numerous times and I think I finally got it down.

This pudding is light and fluffy with the sweet and tartness from the

raspberries completing the flavor.

Coconut Chia Goodness

Ingredients:

–       5 Tbsp. Chia Seeds

–       1 – 14oz can full-fat Coconut Milk

–       3 Tbsp. unsweetened superfine shredded coconut

–       1 Tsp. vanilla

–       2-3 Tbsp. Honey or Agave

–       Topping: Homemade Raspberry Jam/or any desired Jam/ or Fresh Fruit (I used fresh                 raspberries).

*Note you can make your pudding thicker by adding less coconut milk, or thinner by adding more coconut milk. Additionally, you can double the recipe and use 1 can of full-fat coconut milk and one can of low-fat coconut milk.

Directions:

1.     Combine all ingredients (except the raspberries and jam) in a bowl and mix until the chia seeds begin to expand. Cover bowl with plastic and refrigerate overnight/or at least 4 hours to allow the chia seeds to fully expand.

2.     Once ready, remove from fridge and mix up to fluff up the pudding. Add in single serving size dishes and top with desired Jam and Fresh Fruit. 

One recipe makes about 4 servings.
