Tabouli Salad with Farro

This greek salad is quick, light & healthy!

Yield: 3-4 servings

Time: 30-35 Min

Ingredients:

3 cups Kale, chopped finely

1 cup Parsley, chopped finely

1/2 medium sized red onion, diced

1/2 cup scallions, chopped fine

1/2c cucumber, diced

1 cup cherry tomatoes, sliced

1/2c sliced raddishes

1.5 cups cooked farro

Juice from 2 lemons (approx. 1/3 cup)

1/4c extra virgin olive oil

Salt & Pepper to taste

Directions:

1. Cook farro per instructions. Meanwhile prep and chop kale, parsley, onion, scallions,

cucumber, tomatoes, and radishes. 

2. Combine all in a big mixing bowl. Add lemon juice and olive oil. Mix and add salt and

pepper to taste.

3. Once farro is cooked and cool, add into salad and mix until well combined. 

4. Enjoy immediately, also tastes great the next day!
