Fresh Veggie Pizza

Perfect for a dinner party appetizer, or light meal
Prep: 15 Minutes

Yield: 4 servings

Ingredients:

 1-2 Naan Pitas (we always make two whole-grain naans, because one is just not enough)

 1/2c hummus (my favorite for this recipe is Mediterranean olive hummus)

 1 cup fresh veggies, finely chopped – Broccoli, snap peas, red pepper, cherry tomato,
 red onion, shredded carrot, and avocado

 1/4c fine shredded parmesan cheese

Directions:

1.     Toast Naan pita in the oven under the broil setting on both sides until golden and a

        little crunchy (not too crunchy though). Should golden up in approx. 4-5 min.
        
        Remove from oven and allow to cool for a few minutes. (Tip: Also amazing GRILLED!!)

2.     Spread a generous amount of hummus on toasted pita.

3.     Add chopped veggies over the hummus.

4.     Sprinkle with cheese and serve immediately.
