Grilled Veggie Pizza

This is one of my favorite go-to quick lunches,

and depending on what’s in season I

often make it with a different variety of

vegetables each time. I hope you enjoy

this one as much as I do!

Yield: I pizza

Time: 15-20 Min

Ingredients:

1 Whole Grain Naan Bread

1/4c Your favorite Hummus (Mine is Trader Joes – Mediterranean Hummus)

1 Cob of Corn

2 Tbsp Olive Oil

Salt & Pepper to taste

Few slices of a fresh Jalapeño 

4-5 Button Mushrooms

1/4 of a Zucchini, Sliced

Lemon Slice- optional

Cilantro – Garnish

Directions:

1. Toast or grill Naan until golden on the outside but soft and fluffy on the inside.

2. Meanwhile, sauté mushrooms and zucchini in olive oil with salt and pepper. Sauté 

veggies until soft and golden. Then, cut off the corn off of the cob, and sauté as well.

Add a few slices of jalapeño and continue to sauté.

**Note: I washed my mushrooms and zucchini, drizzled them in olive oil and added salt and

pepper, then grilled the veggies. Sautéing is just as good, and is quicker. I did however

sautéed my corn.

3. Then, spread Naan with hummus and top off with sautéed or grilled vegetables. Squeeze

lemon juice over pizza and garnish with cilantro.
